Crispy Peanut Butter Balls



Ingredients: 

1 cup butter (soft, not melted; MAKE SURE IT IS VERY SOFT!) 

2 pounds powdered sugar 

4 cups creamy peanut butter (2lb 8oz) 

6 cups rice crispies cereal 

3 bricks almond bark; chocolate & vanilla (available at WalMart) 

Directions: 

1. Melt the almond bark in the microwave. Rex melts 1/2 a brick at a time. 1 minute on high, stir, do more as needed. You want the chocolate to be somewhat “liquidy” to coat the balls evenly. 

2. In a large bowl, mix the softened (VERY SOFT) butter, powdered sugar and peanut butter until well mixed. 

3. Add the Rice Crispies and mix thoroughly. 

4. Form 1” balls with a cookie dough scooper or your hands, packing the balls tightly so they don’t break apart. 5. Place ball on fork, dip into the chocolate and place on wax paper.
