Pickled Beets

Prepare beets by cleaning well, cutting tops 2" long
put into rapid boiling water, cover boil for 5 min turn heat off and let set 2 hours.

Prepare jars, lids and bands

Prepare syrup:
1 cup sugar
2 cups water
2 cups apple cider vinegar
1 tsp cloves
1 tsp allspice
2 tsp cinnamon
Bring to a boil then simmer till used

Slip skins off beets and slice, pack jars leaving 1/2 inch
Fill jars with syrup again leaving 1/2 inch but covering all beets
Remove air bubbles

Process in a water bath for 35 min
