Set oven to 350
Prepare 1 loaf pan or 4 small loaf pans
3/4 cup pecans Chopped
1/3 cup fresh cranberries Chopped
Combine and set aside
In a stand mixer add:
1/2 cup butter spft
1/2 tsp vanilla
2/3 cup sugar
3 eggs
Zest from 1/2 orange
Cream together
In separate bowl wisk together:
1/1/4 cup flour
1 1/2 tsp baking soda
1/4 tsp salt
You will need 1 cup buttermilk
Add flour mixture to creamed sugar and butter in three portions alternating with buttermilk
Fold in cranberry mixture
Pour into pans bake
Large 55-60 min
Small 35-45 min
or until a toothpick comes out clean
let cool, wrap in parchment paper and let set for 24 hours before cutting

Easily sticks to the pan. use parchment paper in the bottom of the pan.
