Summer Pie

Pie crust for 9" pie

2 cups sliced peaches
2 cups raspberries
1 cup half and half
1 egg
2/3 cup sugar
1/4 cup flour
1/2 tsp cinnamon
1/4 tsp salt

heat oven to 400
prepare fruit, mix together and spoon into uncooked pie shell

Combine Half & Half, egg, sugar, flour, cinnamon and salt. Mix well

Pour over fruit.

Bake for 50 min until firm.

Cool completely serve with ice cream or whipped cream.

Summer Pie with Whipped Cream

Dilly Salmon with Cucumbers

1 T oil
4 salmon fillets (1 lb)
1 cup milk
1/2 cup (4oz) cream cheese
1/2 cup chopped cucumber
2 T fresh chopped fresh dill

Heat oil in a large skillet on med heat. Add fish, cook for 5 min on each side or until fish flakes easily with a fork. Remove from skillet, cover to keep warm.

Add milk and cream cheese to skillet, cook and stir until cream cheese is completely melted and mixture is well blended. Stir in cumcumbers and dill.

Return fish to the skillet. Cook 2 min or until heated through. Serve topped with cucumber sauce.
