Apple Crunch Pie

Peel and slice apples (about 8) layer in 9X13 pan (should be about 1 1/2 " of apples in pan)
Sprinkle 1/2 cup sugar over apples
Pour over 3/4 cup water
Set aside to rest

Mix together well
1/2 cup flour
1 cup sugar
1 cup graham cracker crumbs
1 cup chopped nuts
1/2 cup melted butter
1/2 tsp cinnamon

Cover apples with crumb mixture

Bake for 30 min @ 350

Top with ice cream or whipped cream or cool whip

Also good with peaches, apricots (more sugar), and berries

Chocolate Lava Cake

Centers: 2oz bittersweet chocolate
baking bar
(I used Ghirardelli)
1/4 cup heavy whipping cream

Cake: 4oz bittersweet chocolate baking bar
8 T (1 stick ) butter
2 whole eggs
2 egg yolks
1/3 cup sugar
1/2 tsp vanilla
1/4 cup cake flour tsp
Raspberries and whipped cream for garnish.

Centers: melt chocolate and cream in double boiler. Whisk gently to blend. Refrigerate for 2 hours until firm. Shape into 6 balls.

Cake: beat oven to 400 degrees (F). Spray 6 Longaberger dessert cups with cooking spray. Melt chocolate and butter in double boiler. Whisk gently to blend. With an electric mixer (Kitchen Aid of course!) whisk eggs, yolks, sugar, and vanilla on high speed about 5 min or until thick and light. Fold melted chocolate mixture and flour into egg mixture just until combined. Spoon cake mixture into dessert cups. Place a chocolate ball (centers) in the middle of each dessert cup.

Bake about 15 min or until cake is firm to the touch. Let sit out of the oven about 5 min. Run a sharp knife around the inside of each dessert cup. Place a Longaberger dessert plate on the top of each dessert cup, invert and remove the dessert cup.

Garnish with raspberries (or strawberries) and a dollop of whipped cream.

Non-Alcoholic Sangria

1/4 cup sugar
1 cup orange juice
1/2 cup fresh lemon, sliced
1/2 cup fresh orange, sliced
1 sm apple or peach, cut into wedges
4 cups club soda or seltzer water
4 cups grape juice

In a large pitcher, combine orange juice, sugar, and grape juice. Add cut fruit and stir until sugar is dissolved. Refrigerate until cool and add seltzer water or club soda just before serving.

Mexican Shredded Chicken

1 small bottle of Kraft Zesty Italian Dressing
1 T chili power
1 T cumin
2 cloves garlic minced
5 lbs chicken breasts

Cook all together in a crock pot for 4 h ours, shred meat and cook 1 additional hour.

Cilantro Ranch Dressing

Place all in blender

3 fresh tomatillos, cut into quarters (can use canned)
Juice of 1 to 2 limes
1 cup buttermilk
1 cup mayonnaise
1 cup sour cream
1 pkg ranch buttermilk dressing mix
1 cup fresh cilantro
5 stalks of green onions with ends
2 cloves crushed garlic
1/4 tsp salt
1/4 tsp crushed cayenne pepper
4 tsp sugar

Combine and blend well. Refrigerate one hour.

Sweet Pork

6 to 7 lbs pork (roast or tenderloin)

Sauce:
3 (8oz) cans of tomato sauce
2 (8 oz) cans El Pato (yellow)
2 cups brown sugar
1 cup water

Mix sauce ingredients and pour over pork in crock pot. Cook on low for one night and half a day. One hour before serving, shred meat and put back in sauce, in crock pot. Keep warm for serving.

Neiman-Marcus Cookies

I got this e-mail from a friend in our ward. Funny!!

A little background: Neiman-Marcus, if you don't know already, is a very expensive store; I.e., they sell your typical $8.00 T-shirt for $50.00.Let's let them have it! THIS IS A TRUE STORY! My daughter and I had just finished a salad at a Neiman-Marcus Cafe in Dallas , and we decided to have a small dessert. Because both of us are such cookie lovers, we decided to try the 'Neiman-Marcus cookie.' It was so excellent that I asked if they would give me the recipe, and the waitress said with a small frown, 'I'm afraid not, but you can buy The Recipe.' Well, I asked how much, and she responded; 'Only two fifty - it's a great deal!' I agreed to that, and told her to just add it to my Tab. Thirty days later, I received my VISA statement, and the Neiman-Marcus Charge was $285.00! I looked again, and I remembered I had only spent $9.95 for two salads and about $20.00 for a scarf.. As I glanced at the bottom of the statement, it said, ' Cookie Recipe-$250..00. ' That was outrageous! I called Neiman's Accounting Department and told them the waitress said it was ' two fifty ' , which clearly does not mean 'two hundred and fifty dollars' by any reasonable interpretation of the phrase. Neiman-Marcus refused to budge. They would not refund my money because, according to them, 'What the waitress told you is not our problem. You have already seen the Recipe. We absolutely will not refund your money at this point.' I explained to the Accounting Department lady the criminal statutes which govern fraud in the State of Texas . I threatened to report them to the Better Business Bureau and the Texas Attorney General's office for engaging in fraud. I was basically told, ' Do what you want. Don't bother thinking of how you can get even, and don't bother trying to get any of your money back.' I just said, 'Okay, you folks got my $250, and now I'm going to have $250 worth of fun.' I told her that I was going to see to it that every Cookie Lover in the United States with an e-mail account has a $250 cookie recipe from Neiman-Marcus...for free. She replied, 'I wish you wouldn't do this.' I said, 'Well, perhaps you should have thought of that before you ripped me off!' and slammed down the phone.So here it is! Please, please, please pass it on to everyone you can possibly think of. I paid $250 for this, and I don't want Neiman-Marcus to EVER make another penny off of this recipe!

NEIMAN-MARCUS COOKIES (Recipe may be halved)
2 cups butter
24 oz. Chocolate chips
4 cups flour
2 cups brown sugar
2 tsp. Soda
1 tsp. Salt
2 cups sugar
1 - 8 oz. Hershey Bar (grated)
5 cups blended oatmeal
4 eggs
2 tsp.. Baking powder
2 tsp. Vanilla
3 cups chopped nuts (your choice)

Measure oatmeal, and blend in a blender to a fine powder. Cream the butter and both sugars. Add eggs and vanilla, mix together with flour, oatmeal, salt, baking powder, and soda. Add chocolate chips , Hershey bar, and nuts. Roll into balls, and place two inches apart on a cookie sheet. Bake for 10 minutes at 375 degrees.
Makes 112 cookies

Pumpkin Roll

Pan: prepare pan by spraying with cooking spray, line with parchment paper and spray again. If desired add chopped nuts (pecans or walnuts) on top of parchment after final spraying.

Cake:
3 eggs
1 cup sugar
2/3 cup pumpkin
3/4 cup flour
1 tsp cinnamon
1 tsp baking soda

Combine ingredients and pour into prepared jelly roll pan or cookie sheet. Bake 15 min at 350. Turn onto a clean dish towel (not terry cloth) dusted with powered sugar while still warm. Remove paper and roll into towel. Let cool completely

Filling:
1 8 oz cream cheese, soft
1/2 stick butter
1 cup powered sugar
1 tsp vanilla

Mix together all ingredients. Unroll cake carefully, spread with cream cheese mixture and roll up again. Chill before serving dusting with powdered sugar.

Roasted Red Pepper Rotini Caesar

Serve hot or cold

1pkg rotini
1 12oz jar of roasted red peppers, sliced (found in the pickle isle)
4 cups of fresh baby spinach or frozen thawed with most of the moister out
1 cup creamy Caesar dressing
Shredded Parmesan cheese to taste (lots for me)
Cracked pepper to taste
Salt to taste
Optional:
1 can of cooked chicken

To serve hot:
Cook pasta. Heat a large saute pan with a light film of oil. Toss in red peppers and spinach; heat until warmed (only about 1 min). Add cooked pasta and toss. Add dressing and heat through (about 3 to 5 min). Top with Parmesan cheese, pepper and salt.

To serve cold:
Cook pasta, let cool. In a large bowl all pasta, peppers, spinach and toss. Top with Parmesan cheese, pepper and salt. Refrigerate until ready to serve.
